There aren’t very many things that I enjoy in this world as much as peanut butter. I try to incorporate it into my intake every single day. I’m always trying to come up with new and healthy things to put my peanut butter on. The possibilities truly are endless!
That’s why I present you with these.
Now I’m sure you’re wondering how in the world these chocolate cookies can be healthy. Well I added a secret ingredient and since I like you guys so much, I’m willing to share it with you. 😉
It’s spinach. Two cups of it!
Now I’m sure some of you might be a little skeptical of it. Be adventurous! You honestly can’t even taste the spinach in these cookies. And since there’s a peanut butter topping I think we can all look past the fact that the spinach is there. 🙂
1/2 cup Earth Balance
1/4 cup greek yogurt
2 Stevia packets
1/2 cup brown sugar
1/3 cup agave
2 tbsp flax + 6 tbsp water (or 2 eggs)
2 tsp vanilla
2 cups whole wheat flour
1/2 cup cacao
1 tsp baking soda
1/2 tsp salt
2 cups spinach
Preheat oven to 350°
In a large bowl mix together Stevia, brown sugar, flour, cacao, baking soda, and salt.
In a blender blend together butter, yogurt, agave, flax + water, vanilla, and spinach.
You don’t want large chunks of spinach in your cookies so the mixture should look similar to this.
After your wet ingredients are blended together, add the wet mixture into the dry and mix together. I used my KitchenAid stand mixer for this part.
Once your dough is ready, roll it into balls and place on a cookie sheet. I made fairly large cookies, but if smaller cookies are your thing then by all means; do it!
Put these babies in the oven and bake for 12-15 minutes.
When they’re done put them on a cookie sheet and let them cool for about 30 minutes.
While you wait for them to cool you can make the peanut butter topping.
Peanut Butter Frosting
1/2 cup creamy peanut butter
3/4 cup almond milk
2 tbsp chia seeds
Mix ingredients together. Frost cookies!
